method:cook 1 cup rice and let it cool.heat 2 tbsp oil in a pan. add 1 tsp mustard seeds and let them spluter.add cury leaves and chopped onions saute until soft. add 1 green chilli and little ginger and mix well.add 2-3 chopped tomatoes and cook until soft and mushy.add spices turmeric powder, red chilli powder,salt.mix well and cook 2-3 minutes .add cooked rice to pan mix every thing well.garnish with coriander leaves and serve hot.tips use ripe tomatoes for bettertaste.do not over mix rice.you can add peanuts for extra crunch

1 tsp red chili powder
1 tsp garam masala
salt to taste
fresh coriander for garnish

2 cups water
1 carrot chopped
1/2 cup green peas
1 tomato chopped
1 onion sliced
1 tomato optional
2 tbsp oil or ghee
1 tsp cumin seeds
2 cloves
1 small cinnamon stick
1 bay leaf
1 tsp garlic ginger paste
1-2 green chilies
salt to taste
coriander leaves for garnish
method:
1 wash and soak basmati rice for 15 minutes.

3 add cumin seeds, cloves, cinnamon and bay leaf,
4 add sliced onion and saute until gojden brown,
add garlic ginger paste and green chilies.
add chopped vegetablesand cook for 2-3 minutes
add coaked rice and gently mixed
add water and salt. cook until rice is soft,2 vhistles in cooker or 10-15 minutes in pan,

HOME MADE CHICKEN BIRYANI
INGREDIENTS
. 500 g cut into pieces
. 1 cup plain yogurt
. 1 tbsp ginger -garlic paste
. 1 tsp turmeric powder
. 1 tsp chili powder
. 1 tsp coriander powder
. 1/2 tsp garam masala
salt to taste
. 2tbsp lemon juice
. 2 cups basmati rice
. 2cups water
. 2 bay leaves
. 4 cloves
. 2 medium tomatoes, finely chopped about 200 g total
. 4 cardamoms
. 1 cinnamon stick
. 2 large onions ,thinly sliced
. 2 green chilis, slit
. 1/4 cup chopped mint leaves .
. 3 tbsp cooking oil or ghee
. pinch of saffron soaked in 2 tbsp warm milk
INTRUCTIONS:
. 1 wash and soak the basmati rice for 30 minutes.
. 2 mix the chicken with yogurt, ginger-garlic paste, spices, salt and lemon juice , marinate for 30 minutes.
. 3 Heat oil or ghee in a large pan and fry the sliced onions until golden brown , keep some for garnish
. 4 Add the tomatoes and green chilies cook until the tomatoes become soft.
. 5 Add the marinated chicken and cook until it is almost done.
. 6 Stir in the mint and coriander leaves.
. 7 In another pot, boil water with the whole spices and salt. Add the soaked Rice and cook until it is about 70./. done ,Drain the Rice .
. 8 Layer the partially cooked rice over the chicken , sprinkle the fried onions and saffron milk on top.
. 9 cover the pot tightly and cook for 20-23 minutes
. 10 Gently fluff the biryani before serving
SERVING SUGGESTION:
Serve hot with onion raita, boiled eggs, salad .
